Apple Loaf Recipe
Today was a gloomy day, so we stayed inside and did some baking. I was craving something simple with apple, so I put together this yummy apple loaf.
Although this apple loaf may not look that exciting - it tastes quite the opposite. My husband is obsessed with toasting my baking so he ate a few slices that way. And Lue happily ate her piece while watching an episode of Dora (and giving mom a little time to herself).
The apples in this recipe are what makes it so tasty. Combined with some simple ingredients, most of which you probably already have in your pantry, and you've got yourself a perfect treat to have with a cup of tea!
Apple Loaf RECIPE
1 cup whole wheat flour
1 tsp baking powder
1/4 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg (and more for sprinkling on top)
1/2 cup maple syrup
2 tsp vanilla
1/2 cup sour cream
2 Tbsp coconut oil
1-2 apples, peeled and finely chopped (I used 2)
Preheat the oven to 350 degrees. And lightly coat your loaf pan with oil.
In a large bowl, combine whole wheat flour, baking powder, salt, cinnamon, and nutmeg. Whisk together and set aside.
In a medium bowl, combine maple syrup, egg, vanilla, sour cream, and coconut oil.
Pour wet ingredients into bowl of dry ingredients. Mix together until combined.
Fold in about 3/4 of your chopped apples. Set aside the rest.
Pour into loaf pan and smooth out the top of batter with a spatula. Next, take the 1/4 of chopped apples left over and sprinkle them over the top of the batter.
Bake 50-60 minutes, or until of loaf is golden brown and toothpick comes clean after poking center with it.
Let cool about 10 mins before removing from pan and letting cool another 15 minutes. Sprinkle a little extra cinnamon and nutmeg on the top of the loaf. Serve warm with a cup of tea or store in an airtight container for up to a week.
