Can we talk about freezer meals for a second? They’re not new, they’ve been around forever, longer than you and I were mothers. But they’re easy to make and can save loads of time when you’re a busy mom. That’s why I love them!

If you’re new to freezer meals, let me share with you one of the easiest things you can make. These simple black bean freezer burritos will save you when your kids are hungry and you need something in a pinch. They’re easy to microwave, or cook on a skillet. You can pack them in their school lunches, or eat them for breakfast. Basically, they should be a staple in every moms freezer because they’re SO EASY!!

When I’m making my freezer burritos, the first thing I like to do is put all of my ingredients into separate bowls. This makes assembling the burritos really fast.

This recipe does require rice, so to make things easier I like to cook that ahead of time and keep it in the fridge until I’m ready.

Once I’m ready to assemble the freezer burritos, here’s what I do: Imake four separate bowls for the toppings, including salsa, grated cheese, black beans, and cooked rice.

Then I heat the tortilla wraps in the microwave for 15-20 seconds to make them easier to wrap. I like to use the silver hills sprouted turmeric tortilla wraps. But you can use any flour tortilla that you like.

Now here comes the easy part! To assemble the black bean freezer burritos, take a spoonful of each ingredient and place it in the middle of the tortilla. You don’t want to add too much because it will be harder to wrap. Now you can wrap the burrito and cover it with cling wrap. Repeat these steps you’ve made all of the burritos.

To prevent freezer burn, place each wrap inside a ziplock freezer bag and label the outside with instructions. Then when you need and easy breakfast or lunch, you can open the freezer and grab one.

To heat them up you can either microwave them for a minute or heat them on a skillet with a little bit of oil.

Black Bean FREEZER Burritos Recipe

INGREDIENTS:

  • 1 can black beans

  • 1 cup brown rice

  • 1 cup salsa

  • 1 cup shredded cheese

  • 6-10 tortilla wraps

DIRECTIONS:

  1. Cook the rice ahead of time and store in fridge until you’re ready to use it.

  2. Place black beans, rice, salsa, and shredded cheese into small separate bowls. Heat the tortilla wraps for 15-20 seconds in the microwave.

  3. Using a spoon, place beans, rice, salsa, and cheese in the center of the tortilla wrap. Roll the burrito and cover tightly with cling wrap. Place all of them inside a ziplock freezer bag and store in the freezer.

  4. Microwave Heating Instructions: Remove cling wrap and place in a paper towel. Microwave for 1-2 minutes, or until the burrito is heated through.

  5. Skillet Heating Instructions: Remove the cling wrap and wrap a paper towel around the burrito. Microwave for 30 seconds, then place on a heated skillet with a little bit of oil. Heat on each side for 30-60 seconds or until the outside begins to turn golden brown and the cheese inside melts.

These black bean freezer burritos are super easy to make. They only require four simple ingredients, and you can prepare them fast! I love to make these for breakfast and they’re great for kids school lunches. If you want to make these a vegetarian burrito, you can use a dairy-free cheese alternative. You can also substitute the rice for quinoa.
